
A traditional Russian dish, Blini is very similar to pancake, but uses yeasted batter. It may be made with any flour - wheat, buckwheat, millet or oatmeal.
Ingredients:
700 gm all-purpose flour
3 eggs
1 liter milk
50 gm yeast
50 gm oil (Do not use butter)
Salt
To Serve
Crème fraîche (Fresh Cream)
Smoked Salmon
Method:
- Warm the milk and mix in yeast, salt and half of the flour.
- Let stand for 10 minutes.
- Incorporate one whole egg and two yolks into the mixture. Mix in the remaining flour.
- Cover it and leave to rise for atleast an hour in a warm place away from breeze.
- Beat the two egg whites stiff. Fold them into the batter just before making the pancakes.
- Heat oil in a pan and spread the batter into a 7mm thick circle.
- Fry on both sides until golden brown
- Serve with smoked salmon and creme fraiche.
- Serve with chilled vodka.
Note: For a vegtarian alternative, substitute salmon with mushrooms, cottage cheese or mashed potatoes.
