A favourite sweet dish all over India, gajar halwa is prepared in many forms. It can be made using condensed milk, mawa, or just milk.
Ingredients:
1 kg carrot, grated
1½ liter milk
2½ cups sugar
1 cup ghee or butter
½ cup Dry fruits (sliced almond, cashew nuts, raisins)
½ tsp Cardamom powder
A pinch of saffron
Method:
- Dissolve the saffrom in milk, bring it to a boil. Simmer with occasional stirring on low heat, until reduced to almost half the quantity.
- Heat 1 tbsp ghee in a pan and add the dry fruits.
- Once the dry fruits are brown, take them off the pan and keep aside.

- In the same pan, pour the rest of the ghee and heat.
- When hot, add the grated carrot.
- Stir for a few minutes on high heat and then reduce the heat to medium and let the carrot cook.

- Add sugar and stir well.

- Pour the milk in, stir and simmer until almost dry.

- Add cardamom powder and mix well.
- Garnish with dry fruits, and silver foil (optional) and serve.
Note: For a richer dish, use 1 liter milk,200gm mawa (khoya) and ½ cup ghee. Add the mawa in the last stage, i.e. after the milk has almost dried up, and then cook until the halwa releases ghee.
