
Makes 8 crepes
I watched a friend from Brittany make these, and realised that there is a trick to making perfect crepes. Crepes are made on a large, flat and hot skillet. Lift the skillet off the heat and spoon the batter along the edge of the pan, tilting it so the batter spreads. One has to practice a little, but it really isn't too hard to make those perfect, beautiful looking crepes!
Ingredients:
½ cup all-purpose flour
1 cup rye flour
1 teaspoon salt
1 teaspoon baking powder
1 Egg
1 tablespoon vegetable oil
2¼ cups milk
Method:
- Combine the flours, salt and baking powder.
- Beat the egg with oil and milk until well blended.
- Add the flour mixture and beat until the batter is smooth.
- Let the batter rest for about an hour.
- Smear a little oil and spread the batter thinly on a large, hot skillet (Use about 3 tbsp batter for 9" crepe), and cook over medium heat.
- Flip over and cook on the other side.
To serve:
- Immediately after flipping the pancake, break an egg in the center and spread the white.
- Sprinkle grated Emmental cheese and fold the pancake from the sides towards the center, as shown in the picture. Serve immediately.
